Certified Green Restaurants®

As of 2023, both UNH Dining Halls, Holloway Commons and Philbrook Hall, are 4-Star Certified Green Restaurants® by the Green Restaurant Association. Four stars is the highest award given and we are so proud of this achievement! Additionally, the UNH Dairy Bar is a 3-Star Certified Green Restaurant®. Through continued sustainability efforts, waste elimination, energy conservation, and extensive recycling, the dining halls and UNH Dairy Bar were able to meet the requirements for this honor.

Chef Todd and his dish at NACUFS Culinary Challenge

Culinary Challenge Competition

Congratulations to Sr. Executive Chef; Todd Sweet who took home the bronze medal from the American Culinary Federation Competition at the 2023 Culinary Challenge. Chefs were tasked with creating a dish using pork tenderloins, ground pork and smoked bacon. They were required to use all three types of pork to build a nutritionally balanced plate including starch, vegetables, and a sauce. Chef Todd put a southern accent on the ingredients, cooking pork medallions, creole with smoky sage sausage, collard greens and black-eyed pea fritters.
