Love protein bars but don’t want to spend a ton of money on them? Our peanut butter protein bar recipe was created by UNH student Erin Kenney who is a member of SPIN (Students Promoting Information about Nutrition). These bars will save you money, are easy to make and don’t contain all the additives in commercially made protein bars that you don’t want.
2 cups all natural peanut butter
2 cups protein powder (we used vanilla cream, but any kind works!)
1 cup honey
1/3 cup ground flaxseed of chia seeds
1 cup rolled oats
Put peanut butter and honey in a large microwave safe bowl. Microwave for 30 seconds and then stir. Add the rest of the ingredients and stir. Place mixture into and 8×8 pan and cut into bars with a knife. Place pan in fridge to harden.
