Zoodles With Spicy Peanut Sauce!

It can be hard to find time to make elaborate meals every night after a long day of classes or work. Winter in New Hampshire has me craving fresh vegetables as well, so I decided to whip up a 20-minute bowl of zucchini noodles with spicy peanut sauce! This recipe is awesome because it is such an easy way to get extra veggies in your day, which can be particularly hard in the winter. And, even better, there is minimal cooking involved!

I recommend chopping all your vegetables ahead of time, but if you have some extra time on your hands, you can certainly do it in the moment. This recipe is also flexible enough for you to customize it to your preferences. For example, I like spicy food, so I added a little more Siracha into the sauce to give it an extra kick.

This recipe was pretty easy to make, and though it requires some chopping, only took me 30 minutes in total. If you are nervous about your knife skills, go to a Nourish Cooking Class if you are a UNH student, or check out videos online for some practice. Or you can buy some precut veggies at the grocery store!
