Sweet and Sour Cauliflower
It can be hard to come home after a long day and cook dinner. Often, I find myself microwaving a sweet potato and cracking open a can of chickpeas and calling it a day. But this weekend, I decided to step out of my dinner comfort zone and make some Sweet and Sour Cauliflower with brown rice. I am here to document my experience and let you all know how it turned out – spoiler alert, it was delicious!
The first step of the recipe was to batter the cauliflower, and not going to lie, I was a little nervous. I don’t have much experience with that and was not quite sure how to dive in. I was semi-successful, but when the recipe says to let excess batter drip off the cauliflower, make sure to do that! My cauliflower took longer to get crispy in the oven because I had too much batter.
Besides that, the rest of the recipe went smoothly. I will say that it was pretty labor intensive so you need to block out an hour or so to devote to this. The original recipe reported 50 minutes, including preparation and cooking time, but it took me 1 hour 10 minutes. I also made some brown rice to go with the cauliflower which was a great addition. I highly suggest doing this to make it a full meal! After the cauliflower was out of the oven and the sauce was made, I tossed them together, and layered the brown rice and cauliflower. I then topped them with some fresh cut scallions and sesame seeds and dug in!
So, if you want to try out a new, healthy recipe and have time to experiment on the weekend, I definitely recommend this one!
