What It's Actually Like to Cook With Cooking Light

- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- ¾ teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 4 cups cauliflower florets
- ¼ cup chopped cilantro
- ¼ cup golden raisins
- 1 tablespoon fresh lemon juice
- ½ teaspoon ground coriander
- 1/8 teaspoon ground allspice
- 4 (4 ½ oz.) skin-on salmon fillets (about 1 inch thick)
This recipe seems easy and quick, which in general it was very easy but there were some flaws listed in the cooking times. It says the salmon takes about 10 minutes to cook, but mine took upwards of 30 minutes. This discrepancy could have been due to my oven, or the salmon might have been a little bigger than the recipe intended. Another fault I found in the recipe was that, for me I would have liked more spices on the salmon. There were plenty of spices on the cauliflower, but in comparison the salmon did not have as much flavor as you would have expected from the title of ‘Spice Roasted Salmon’. Also, personally I felt that this meal needed another vegetable, or side to go with the salmon and cauliflower.
However, this recipe did introduce me to the combination of cauliflower and raisins, a combination I would have never thought of on my own. This pairing, although strange sounding was very good, especially with the spices and the lemon juice. All of the flavors came together very nicely.
