Gather Food Repurposing Program 

Recently, I had the opportunity to sit down with UNH Dining Dietitian, Rochelle L’Italien to talk about the Gather Food Repurposing Program that launched two weeks ago. This new program is a collaboration between UNH Dining, the UNH Nutrition Department, Gather NH, and so many other departments on campus. Essentially, this program works to rescue food that is still good but doesn’t meet “commercial standards” and prevent it from being sent to the garbage or compost pile. Once the food is rescued, it is taken to the Barton Hall kitchen where it is repurposed either into a new dish or sauce and is redistributed to the community via food pantries and soup kitchens.  

Eventually, the program is going to work more to keep the food on campus to address food insecurity experienced by UNH students.
