Cooking with Healthy UNH Interns: Lasagna

Not feeling like cooking an intricate meal? Try this one!
My mom has been making lasagna since I can remember and I wanted to try it out since I am 22 and I should probably learn my mom’s special recipe.
It turns out that the recipe is not that special at all, all you need is:

16 oz of ricotta cheese (I used the whole milk version)

A box of oven ready lasagna noodles

26 oz of marinara sauce (I used Trader Joe’s)

Protein (this can be ground beef, I used 8 oz of Gardein’s Beefless Ground)

Salt and pepper to taste

Garlic cloves
-
1 cup of water
Instructions:

First, we will cook the protein sauce mixture. Add salt, pepper, garlic cloves, and the jar of marinara sauce.

Once the sauce is cooked, spread it lightly as the first layer on our glass pan.

Next, put the oven ready noodles down as a layer. If you did not get oven ready noodles, cook your noodles first so they are al dente.

The third layer is ricotta cheese. Spread a nice layer on top of the noodles.

Continue layering sauce, noodles, and ricotta until you reach the top of the glass pan, then add mozzarella to the top.

Add about 1 cup of water to the dish to avoid noodles getting crunchy when in the oven.

Cover with tinfoil and cook in the oven at 375º for 45 minutes, then uncover and cook for 15 minutes.
