  • 3 ½ cups bread flour, plus more for dusting

  • 2 ½ cups shredded sharp cheddar cheese, divided

  • 2 jalapeñoes, seeded and coarsely chopped

  • 1 jalapeño, sliced into rings, divided

  • 1 tablespoon kosher salt (optional)

  • 2 cups warm water

  • 2 ¼ teaspoons instant yeast

  • 1 tablespoon olive oil

Instructions:

  1. Mix together flour, 2 cups of cheddar cheese, 2 chopped jalapeñoes, and the salt together in a bowl. (Salt is optional here.

  1. In a separate bowl, mix together 2 cups of warm water and 2 ¼ teaspoons of instant yeast.

  1. Combine the wet and dry mix and stir until a dough forms.

  1. Using a spatula, fold the dough 8 times and let it rest for 60 minutes.

  1. Fold the dough for an additional 8 times and let it rest for 30 minutes. During these 30 minutes, preheat the dutch oven at 450°F.

  1. Put flour down to use for a workspace for the dough and form a ball. Move the ball to parchment paper and place in the dutch-oven.

  1. Put 1 tablespoon of olive oil on top of the dough. Add some cheese and sliced jalapeñoes, too.

  1. Cook inside the oven for 30 minutes with the dutch oven lid on, and 20 minutes with the lid off.

Let it cool and enjoy however you want to!
