Out Of Groceries Because Of The Pandemic?

Make This Recipe Using Only Pantry Staples!
If you have been to the grocery store at all during COVID-19, you have seen empty shelves, sold out produce, and zero toilet paper. This can be alarming at first if you think you don’t have enough to make a proper meal, but do not worry! Here is an easy prep-ahead meal that you can make enough of to last you a week – and it’s all from stuff in your dry pantry.
Spicy three-bean pantry chili is an easy, delicious and healthy meal to make for your family when pickings are slim in the grocery store.
Ingredients:
- 3 TBSP vegetable oil (or any neutral oil you have)
- 3 TBSP tomato paste
- 1 dry chipotle pepper
- 3 TBSP chili powder
- 1 TSP dried oregano
- Two 16oz jars mild shelf-stable salsa
- Three 15oz cans beans (any kind)
- One 15oz can corn
- 1 cup rice
- ¼ cup cider vinegar
Heat the oil in a medium pot over medium-high heat. Add remaining ingredients, except the rice, and bring to a boil. Reduce heat and simmerfor 25 minutes, stirring occasionally. In a separate saucepan, cook rice according to the direction of the back of the package. Serve the chili over the rice and voila! Your delicious pantry chili is complete. Try doubling the recipe if you want to have delicious left overs.
