Behind the scenes with the advanced food and beverage class at the gourmet dinner

Paul College students chopped and whipped and sautéed their way to gourmet at a recent dinner culminating this semester’s advanced food and beverage management class.

Each semester, students taking the advanced food and beverage management class at the Peter T. Paul College of Business and Economics plan and execute a gourmet dining experience for the university and surrounding community. UNH juniors and seniors majoring in hospitality management handle every aspect of the gourmet dinner, applying the fundamentals they've learned in classes in a real-world setting.

Their work starts at the beginning of the semester when they choose a management team — a general manager, director of marketing, CFO, front-of-house manager, HR director, head chef and other leadership positions. With guidance from faculty, the management team plans the menu, markets the event, manages finances and collaborates to create an enjoyable evening for diners.

When the gourmet dinner weekend arrives, the management team also takes charge of two classes of freshman and sophomore hospitality management students who serve as food runners, kitchen staff and servers.
