Linguine Tuna Salad

prep time: 20-25 minutes

  • 1 pkg. (~7 oz.) linguine, broken in half, cooked and drained
  • 1/2 cup lemon or lime juice (fresh or bottled)
  • 1/2 cup vegetable oil
  • 1/2 cup sliced green onions
  • 2 tsp. sugar
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1/2 tsp. Tabasco sauce
  • 1 can (12 1.2 oz.) tuna, drained (or 2 small 6 oz. cans)
  • 1 pkg. (~10 oz.) frozen green peas, thawed
  • 2 medium tomatoes, chopped
  1. In a large bowl, combine lemon or lime juice, oil, onions, and seasonings; mix well.
  2. Add hot linguine; toss.
  3. Add remaining ingredients; mix well.
  4. Chill.
  5. Refrigerate leftovers.

Variations:
Use any kind of pasta that you like.
