Four Bean Salad

4-6 servings
Prep time: 5 minutes

  • 1 can (~15 oz.) cut green beans, drained
  • 1 can (~15 oz.) red kidney beans, drained and rinsed
  • 1 can (~15 oz.) chickpeas, drained and rinsed
  • 1 can (~15 oz.) white or black beans, drained and rinsed
  • 1/2 cup olive oil
  • 1/2 cup vinegar (any kind)
  • some Italian seasoning
  1. Open, drain and rinse all the beans.
  2. Combine the oil, vinegar and seasonings in a large bowl.
  3. Add beans to dressing and mix well.
  4. Refrigerate (this will keep for a few days).

Add whatever beans, dressing and seasonings that you like!
