Good Health through Pizza

Tomatoes contain lycopene, which helps your body ward of heart disease and some cancers. Cooking tomatoes and adding a little oil makes the lycopene more readily available - so tomato sauce may be even healthier than a fresh tomato!

English Muffin Pizzas

2-3 servings
prep time: 5 minutes
cook time: 5 minutes

  • 4 whole-wheat English muffins, cut in half
  • 8 oz. spaghetti sauce or tomato sauce
  • 8 slices mozzarella cheese (or 4 oz. shredded mozzarella)
  • some sliced onions, bell pepper, mushrooms, olives, salami, pepperoni, anchovies - whatever you like best
  1. Preheat oven to 350°F. (Or nod happily at your toaster oven.)
  2. Spread each muffin half with tomato sauce.
  3. Arrange veggies (and meat if desired) on sauce, and top with cheese.
  4. Place on foil and cook in oven or toaster oven until cheese melts.

Variation:
Muffin pizzas are a great way to use up any left-overs in your fridge.
Try cooked or raw vegetables, shreds of chicken - anything you can find, that hasn’t yet turned suspiciously green.
