Spanish Rice & Beans

  • 2 TBS. Sofrito*
  • 2 TBS. tomato sauce (or salsa)
  • 1 can (~15 oz.) black beans, drained and rinsed
  • 1/2 cup rice
  1. Boil 1 cup water. Add rice, turn down, and simmer until water is absorbed (about 20 minutes for white rice or 35-40 minutes for brown rice).
  2. Combine Sofrito, sauce and beans in another pot. Simmer on low, uncovered for 30 minutes.
  3. Serve bean mixture over rice.

Variations:
* Sofrito is a prepared combination of foods/spices (tomatoes, peppers, onions, garlic) used in Spanish cooking. You can add a generous tablespoon to flavor soups, stews, rice and beans for an authentic Spanish flavor. You can find Sofrito in the grocery store.
Add capers or green olives if desired.
Top with low fat sour cream, sliced avocado or guacamole and/or shredded cheese.
Add chopped fresh cilantro to the bean mixture.
