Variations:
* Sofrito is a prepared combination of foods/spices (tomatoes, peppers, onions, garlic) used in Spanish cooking. You can add
a generous tablespoon to flavor soups, stews, rice and beans for an authentic Spanish flavor. You can find Sofrito in the
grocery store.
Add capers or green olives if desired.
Top with low fat sour cream, sliced avocado or guacamole and/or shredded cheese.
Add chopped fresh cilantro to the bean mixture.
