- Working with UNH and community, food service, Cooperative Extension and hospital nutrition and dietetics mentors to design competency-based, hands-on learning experiences to advance graduate-level dietetic internship-based training and professional development.
- Collaborating with other nutrition faculty in the design and execution of the Young Adult Health Risk Screening Initiative (YAHRSI). This research project has enrolled over 2,500 students in the past five years and is designed to assess biochemical, nutritional, dietary, clinical, fitness levels and lifestyle habits of college age students.
- Engaging in an interdisciplinary, COLSA supported working group focused on the development of a proposal for a new “Sustainable Agriculture and Food Systems” major at UNH.
- Working as part of the research team in the Office of Sustainability in the development of a Food System Scenario Tool, and the launching of Food Solutions New England state and regional food system resource.
